Pumpkin Cookies




I love pumpkin cookies. These are my favorite. The secret is the butterscotch chips.



3 eggs

2 tsp vanilla

1 cup shortening

3 cups sugar

2 tsp baking soda

2 tsp nutmeg

2 tsp salt

2 tsp cinnamon

2 cups pumpkin

4 1/2 cups flour

1 bag chocolate chips

1 bag butterscotch chips


bake 375* on greased cookie sheet 13-15 minutes.

Wow, what decadent looking cookies! I've never thought to put butterscotch chips in pumpkin cookies. Thanks for the "secret" recipe.

I have SO much winter squash in my garden (which is what I use to make pumpkin bread and cookies) and so I will have to try some different recipes this winter to use them up and this is definitely getting added to the recipes to try out.

Hope you are having a great day! Got to run and cover the garden as there is supposed to be a bad freeze tonight.
